Great recipe. I'm a nut-allergic mostly-vegetarian nursing mom to a dairy-(and other) intolerant 6 mo. old, so I feel your pain! Have you tried experimenting at all with Heidi Swanson's "Big Sur Bars"? http://www.101cookbooks.com/archives/video-big-sur-power-bars-recipe.html To make them a little more decadent (cookie-like), I'll put in extra coconut, cranberries or gogi, toasted nori, and substitute the "nuts" with seeds: pepitas and sunflower seeds.

I've also seen some great recipes for dairy-free, avocado-based puddings. And granitas are totally dairy free if you don't mind all that scraping with a fork.

Thanks for this recipe ~ and I love Coconut Bliss! Yum.
