Many of my fellow gardeners (including Rebecca) are up to their elbows in beautiful ruby red tomatoes. Tragically, the deer snacked on our plants over the summer so we’re just enjoying the bounty we inherit from friends. Still, it’s great to have some September recipes for enjoying these juicy treats while they’re fresh. Here’s one of my favorites. Please post yours so that we can enjoy our home-grown delights in the next few weeks.
Caprese Salad
Simply alternate mozzarella slices and tomatoes on a platter. Top with cut basil, salt and pepper and then drizzle with olive oil.
I LOVE this salad because it’s so simple, healthy and full of flavor. We hope to get more fresh garden recipes from all of you!

Love, love, love Caprese Salad! We’ve already enjoyed it once this tomato season, but I may have to indulge at least once more now after seeing your yummy photo.
I also love Caprese salad. I lived off of it for a month or so during my 1st pregnancy. OK, the recipe below has a lot of other ingredients, but I love it, and always make it when I have a lot of tomatoes to use up. I got the recipe from a friend who said it was similar to one in The Frugal Gourmet:
Black Bean Salad
from Allison Clark (Frugal Gourmet)
2 cans black beans
1 can corn
1 large onion
1 large green pepper
3-5 tomatoes
2 T basil
olive oil
balsamic vinegar
cilantro
Saute onion and pepper in olive oil with basil until tender. Allow to cool. Rinse black beans and corn. Add onion and pepper mixture with beans and corn. Add diced tomatoes and fresh cilantro. Add olive oil, balsamic vinegar, salt and pepper to taste.
If you are not eating this salad all at once:
Combine beans and corn with onion and pepper mixture. Add olive oil, balsamic vinegar, salt and pepper to taste. Add only enough diced tomatoes and cilantro to go with the portion you are eating – these get yucky sitting in the fridge with the dressing. Bean and corn mixture can be kept in the fridge for a week or more.
The Mrs. poster her recipe for pizza sauce over at Not the Jet Set. We made it for family this last weekend and no-one could believe it.
