The Homemade Smoothie and Popsicle Trend Continues…


I’ve known for years that smoothies are a great way to slip spinach, cucumbers, squash and other veggies into my children’s diet. I get to clean out the remnants of my produce drawers and everyone feels like they’re getting dessert. The smoothie mustaches are just a bonus! (This photo was from last summer…before I had totally forgotten the magic that a blender can create!)

So why is it that I so often forget this simple trick?

Luckily Rebecca’s last post bolstered my memories of smoothie success! We whirled up brown bananas, greek yogurt, peanut butter, honey, and cocoa and my children declared all day how delicious their “milk-shakes” were. We poured the leftovers into popsicle molds and the kids were beyond thrilled to eat “fudgecicles” for breakfast. Victory for all! Thanks for the reminder Rebecca!

Purging the Pantry: Creative Ideas for Eliminating Food Waste

In exactly four weeks, we shall be moving and do not want to lug along a dozen cans of black beans and pound of bulk cashews. So for upcoming summer dinners I shall plan meals creatively around the provisions we already have. At this point my ideas include peach and pumpkin veggie-fruity popsicles, white bean soup with summer greens, and nut flour pancakes.

Half eaten bananas, overripe fruit, and unfinished bowls of yogurt will make their way into smoothies, homemade popsicles, and baked goods. Dried beans, pasta, rice and canned tomatoes will contribute to soups and goulashes. When the shelves of my fridge and cupboards are clean and bare, it shall be time to shop again. Until then, we shall think outside the recipe box.

As a child, I remember being thrilled to escape school in mid June—but by August, I was bored to tears. Now as a mom I realize how tough it is to find quality entertainment for kids without spending money or driving all over town. Organic Homemade Popsicles

The sun’s out, your baby’s teething and it’s time for a soothing summer treat.  So, how exactly do you concoct the perfect popsicle?

Popsicle molds:  There are several plastic molds on the market (I have to confess that I own a set), but there are other options available around your home.  You can make mini-pops with icicle trays or individual used yogurt cups. Crate and Barrel made BPA-free popsicle molds earlier this year but they appear to have been discontinued. I’ve written to our friends at The Soft Landing about their safest choice for popsicle molds and will keep you posted on their response.  If you prefer to avoid plastic altogether, you can use paper cups, carefully washing them out and reusing them each time.  You can also try small juice glasses, ensuring that you gradually cool the glass so that it doesn’t crack with extreme temperature change.
